Grilled Cheese Recipies

Lifted from the heart of another thread, here is a thread devoted to the construction of the finest grilled cheese sandwiches in the world.<P>Here's my recipe. The secret? Crispy bread, gooey cheese, and plenty of dairy fat.<P>Take the bread (any sandwich bread, the fresher, the better) and butter BOTH sides of both pieces. There is an art to getting the 4th side buttered without getting butter on anything else.<P>Now, take the inside sides of the sandwich (make sure they are the sequential faces of your two pieces of bread) and slap them on the hot griddle or fry-pan. <P>While they cook, grate your cheese (mild cheddar), or unwrap it (Kraft American singles... 3 slices). <P>When the sandwich inside faces are done, flip one slice of bread over, and lay the cheese on the toasty side. Now put the toasty side of the other slice on top. The cheese should be bonding to the bread as we speak.<P>Now you cook the sandwich till the one side is done, and then flip it over and do the other side. By the time the sandwich is completely toasty on the outside, the cheese on the inside will be completely melted. It had better be, at any rate, or you've failed.<P>Oh, and don't go trying to use margarine. I said butter, so use butter.<P><P>------------------

It took longer than 10 minutes, but here is my report:<P>We didn't have any decent bread; just some tasteless white bread the kids like for sandwiches because they have lousy kid-taste. So I had to go to the grocery store to get bread. Also, someone used up all the sliced American cheese, so I added Kraft Singles to the list. Naturally, we ALWAYS have lots of fresh, real butter (salted and unsalted) on hand, as well as several jars of apricot preserves (the current jar is near the end, so it's more like jam by now).<P>After returning from the store, and unloading the groceries, I delayed my culinary gratification still further by going through the house picking up the contents of the formerly-full trash can that Psycho Dog Woody had strewn all over, because I had Left Him Alone for an hour, and he Has Garbage Issues which he feels compelled to Act Out. (He is adopted, I must point out. A previous owner screwed him up good, and I'm stuck with a magnificent, devoted dog who is certifiable. But I digress...)<P>By the time I was done with all that, I was cranky and hungry and muttering to myself that this BETTER be a damfine grilled cheese sandwich, or heads will roll, and frightening the furry little critters that crossed my path.<P>Okay. Hot griddle. Two slices of bread, buttered on both sides. Sizzle, sizzle...<P>Unwrap, unwrap, unwrap. Flip, plop. Flip,carefully place on top. Sizzle, sizzle...<P>Okay, it's done underneath; Flip. Sizzle...All right, this baby is DONE.<P>Apricot jam, eh? What kind of twisted mind could come up with someth--oh yeah, Mark. Well, okay. How bad can it be? If it's inedible I'll give it to the dog; he's nuts enough to eat anything, and then I'll make me a new one.<P>Spread, spread, spread...<P>Bite...chew...swallow...<grin><P>Repeat "Bite, Chew, Swallow" step repeatedly, until entire sandwich is gone. <P>Lick fingers, smile contentedly, sigh happily, and announce to the world at large that the Mark/Howard Grilled Cheese sandwich is the food of the gods.<P>So, okay. You're both right. And of course I love you for it.

No, Mark, I don't think I will. "Grilled cheese sandwich" is supposed to be dipped in tomato soup, if it's dipped/tainted/bastardized with ANYTHING. It's a pure art form. It is pristine in its dairyness... butter, cheese, and fluffy grain goodness without all that fruit your Mom warned you about. The tomato soup is a concession to trend, but apricot jam (which I love, by the way) is going too far.<P>--Howard
Last night I made the second of many, many grilled-cheese-sandwiches-topped-with-apricot-jam that I expect to consume until the day I die.<P>It was, if such a thing is possible, even better than the first one.<P>Howard, your stubborn refusal to "defile" the perfect grilled cheese sandwich with apricot jam is depriving you of a delectable taste sensation. I've figured out a solution.<P>Have you ever ordered a Monte Cristo sandwich in a restaurant? Basically it's a ham and cheese sandwich, dipped in French Toast egg batter, then deep fried, and sprinkled with confectioner's sugar after the sandwich is done.<P>All you have to do is call this sandwich something else, and you'd probably be willing to give it a try. So from now on, it is NOT a grilled cheese sandwich. It is Pain Grill

Hmph. I'm so disappointed that no one was impressed with my impeccable French.<P>My mind is sometimes so open, Mark, that it should be closed for repairs. But you are welcome to stop by and browse the shelves anytime.<P>I was trying to think of some slightly naughty joke, using the terms "Adulterated" and then "Bastardized," but I'm having brainlock right now.
