I found the religion with Bobunk as a holiday. Now I'm wondering how you stumbled across it.

Well ...
From "Sabrina, the Teenage Witch." Which is apparently where these folks heard about it, judging by their mention of a cat.
In a Christmas episode, Sabrina accidentally zapped Christmas out of existence, so that no one but herself remembered it. Salem (the talking cat) said she had to hurry and get it back, as he had done something similar to a holiday called Bobunk years ago.
So there. Don't go zapping holidays out of existence.

You gotta wonder, with powers like that, doesn't that make Sabrina and her witch and warlock kin more godlings than magic users?
"Here, let me yank out a thread of the universe, because I'm new at this."
Which makes me wonder why there isn't more conflict amongst various witches, seeing as there's huge amounts of power to be grabbed.

Universe-bestriding Conflict (and lack thereof)
Because the StTW writers are a bunch of weenies who fear conflict and drama like Shaggy and Scoob fear flourescent-painted monster suits.
We offered the Archie Comics people a story with meat to it, and their reaction was not positive. I suppose I should find out if Tom The Fanboy still has it posted.
