I had to think about it for a moment, but I think that an Elite and Anderson would be a pretty good match. Don't compare the Elite to the Master Chief, compare him to the marines who are "normal" human beings. And don't forget that anderson supernatural powers would be useless against a non-supernatural enemy. If Alucard's Jackal can beat Anderson's regeneration, then the Elite's pummeling could beat it too. IMO.
How about Alucard vs Superman?

You know what would be more interesting instead of superman?

Walter did reveal that the Jackal (the weapon; not a Covenant Jackal) was crafted to be used agianst Anderson. Alucard's Casull was useless on Anderson. Also, Anderson does seem to have superhuman strength so he could match or possibly surpass the strength of a Covenant Elite. Supernatural or not, getting impaled by many bayonnets would be lethal.

Depends on whether Batman had his plot armor on or not. With plot armor, it's been established that Batman can defeat just about any figure in the DC Universe given enough time to prepare, including Superman, several gods, and Darkseid (I think). There was a comic of Batman vs. Dracula (regular); Batman won. So Batman already knows how to fight vampires, though admittedly not ones of Alucard's power level. Batman also possesses all the tools and devices he would need to take on Alucard mano-a-mano, such as holy water, crosses, magic items, etc. Even if Alucard unleashed his zombie horde, Batman could (and has) fought through an army that size single-handedly, especially given his equipment.
Three scenarios to consider based on what can be assumed:
If Alucard just dropped in on Batman and Batman was not previously aware of his existence, Alucard would win. It's been established that Batman can lose when surprised with overwhelming force (ex. Prometheus accomplished this, but only once).
If Batman knows Alucard exists, it can be safely assumed Batman would already possess a means to neutralize Alucard, just as he knows how to neutralize any and every supervillain/superhero in DC that he's encountered. In this instance, the fight is dead even, since even if Batman knows how to handle Alucard doesn't mean he'd be able to implement it in time, especially if it's Alucard determining the time of the encounter.
If Batman is deliberately going after Alucard, he will win, because it means he knows with certainty he can win. And in general, when Batman sets out to accomplish something it's with a plan that works. He'd probably have a sealing spell or some such readied so all he'd have to do is hit Alucard with an artifact and he'd be disintegrated (magic, after all, can bypass all of Alucard's immortality tricks).
It'd make for one hell of a comic crossover, though.

Walter vs the guy from Spriggan that uses wires (Can't remember his name right now.) That would be a pretty cool fight. If it was young Walter, he would win. If it was Walter as he is now, it would probably be about even.

Hellboy makes a sarcastic comment about pancakes. Alucard and Alexander DESTROY HIM because they have no sense of humour and really, really like their pancakes. Then it kind of plays out like the rest of Vol. 8-9, except with more syrup. Uh, this fight suddenly took an unexpected turn into kinkiness. Sorry.

He's probably beaten Darkseid a few times, but the most recent occasion was probably in that Superman and Batman series. In that case, he had the help of a superpowerful Macguffin-computer called a Mother Box (gods, DC, get better names!) and was kinda holding the whole planet hostage.
Batman also seems to fight vampires on a semi-regular basis. In one series, he IS a vampire.

A fun battle to watch would be Alucard vs. a REAL regenerator: Dead Pool! Dead Pool would lose - horribly - but I can't imagine the number of jokes he could make at Alucard's expense before it was through.

I remember seeing a comic page where Deadpool had a stash of various items from superheroes like Iron Man's boot
As for this plot armor, I never heard of it o.o
And lastly to this post...mmmmm, pancakes

Alucard vs. Bleach's Aizen Sousuke
Considering Aizen's massive defensive power, it'd be interesting to see if any of Alucard's godmodded attacks could put a scratch on him. Aizen also has a troupe of Menos Grande, Arrancar AND he's a Shinigami to boot, but being a God of Death is useless when your target's already dead.
Vash the Stampede vs. Seras
Vash would have a field day with the jokes, Seras would get angry and rain bullets on him...
Should be interesting.
Vash the Stampede vs. Devil May Cry's Dante vs. Alucard
Hm, the Holy Trinity of demon hunters with cool hair, two guns that are coloured black and silver, and a red overcoat over black clothes. They'd spend a couple minutes swapping fashion tips before everyone unleashes their super attacks and the world explodes.

"Plot armor" is a phrase used to refer to when a character is being favored by the writers and therefore things go their way. Batman tends to be favored by almost all the writers in DC, so whenever he gets involved, he can do no wrong. Mind you, since it's Batman, a hero designed as the epitome of human accomplishment in mind and body, it's not too badly unbelievable.

Now that I think about it, I suspect that Alucard would LOVE fighting Batman. Heck, they might even go out for tea. DEATH TEA.
Oh, and as for
Rip van Winkle vs. Tomoya Daidoji in a singing contest.
Rip is doomed. She'll take one look at Tomoyo's Sakura shrine and lose it completely. Then Tomoyo will start filming her, and everyone knows that Rip's camera-shy. Tomoyo starts belting out the J-pop, and all looks dark for Rip until Sakura comes in and drinks Tomoyo's blood. Rip wins by default.

My friend James thought this one up: Alucard vs. the Daleks. (Don't forget; the Daleks are bulletproof.)
And although I can't decide who'd go up against him, I'd really love to see how a Hellsing character would fare against Jigsaw from the Saw movies. (smirks evilly)
And just for fun... Hannibal Lecter vs. Walter vs. Dok in a cook-off. (Alucard's not there because all his recipes have to be liquefied.)

If it really is IRON CHEF, Walter would pwn. Because what are his wires if not the most advanced form of that choppy thing they do at Japanese steak houses? The crowd would go nuts!
