I know the Moche used to channel water down from the mountains for irrigation. It would build up so much speed that they had to add switchbacks to slow it down. The irrigation systems themselves were kinda neat. Because of all that speed, they could actually RAMP one stream of irrigation over another.

Indeed. Which is why upper Egypt is lower, and lower Egypt is upper.
