Also, every animal that is an herbivore has something else trying to eat it. If we become vegetarians, something else is gonna try and eat us. Since we're the most complex species here that means hungry carnivorous space aliens are gonna show up and start having a buffet. I don't want hungry space aliens here....do you??? Protect humanity, eat a cow!
Complexity is what we ment when saying "lower evolutionary stage". It's an unprecise terminology, but not being very informed in biology, I don't feel the need to be that precise anyway.
