My daughter tried horse sushi in Japan.

Unless you can cite an actual peer-reviewed source for this, I'd have to categorize this solidly in the "urban legend" and/or "PETA propaganda" categories. Humanity does tend to remember things longer if a little bit of ceremony and ritual are added, but look at some of the things Leviticus contains... Instructions to dig a hole in the ground away from your camp to bury your excrement? Not quite. Rabbits produce the bacteria that breaks down cellulose in the cecum and it goes through the same plumbing as fecal matter, so the two are easily confused. Your standard bunny bullets are (usually) hard and round while cecal pellets look like a small cluster of shiny grapes. Pigs will eat anything. Literally ANYTHING. And it doesn't take much to figure that what they eat will have detrimental effects on the flesh of the animal.
But let us stop and take note that the law didnt just apply to pigs. It applied to many animals. In order to be kosher an animal had to have both a cloven hoof and chews the cud. Cows, sheep, and goats do. Pigs do not. However, rabbits are also mentioned in this regard.... which shows a rather advanced knowledge of biology. Rabbits DO "chew the cud" for the same reason that cows and sheep do; in order to more thorougly digest their food
The main difference being that in the case of rabbits, the "cud" passes all the way through the body.
Yup. They reconsume their own poop. Isn't that a lovely thought?
Not to say that they had zoology professors running around at that time that figured that out. But one can suppose you can learn a lot about nature when you're a shepherd with nothing better to do than stare at it for days on end.....
